Your contraption, as you describe it, seems to be what's properly termed a mandolin -- though as I'm not much of an etymology sleuth, I'm sure I don't know why!
Please do get used to using it with whatever guard feature may come with it or you can improvise. Fingers are one of life's most valuable accoutrements and deserve protection and respect. Trust me (and Lincoln Duncan, per Paul Simon) that they come in endlessly handy; you'll want them to last and last!
